My Healthy Choice Party

So a while back I reviewed and held a (very successful) contest for Healthy Choice. When I was approached to host a Healthy Choice House Party there was no way I was going to say no. It was meant to coincide with the Emmy Awards but I decided to hold mine earlier since the kids have early bedtimes, and it was just as well as the girls were under the weather. To add some pizazz I asked my guests to whip up some healthy and delicious recipes of their own.

Here is the winning (healthy food) recipe submitted by Ragini (the last picture in the slideshow):

Sooji Upma

1 cup cauliflower florets

1 cup spinach leaves

½ cup peas

½ cup shredded carrots

1 cup French beans

½ cup corn

½ cup diced potatoes

¼ cup finely diced onions

1 cup of finely diced tomatoes

2 cups water

2 tsp tomato ketchup

Juice of 1 lemon

½ cup cilantro leaves

2 cups sooji (semolina – cream of wheat)

For tempering

2 tsp oil

½ cup mixed lentils (washed, soaked for 30 minutes. Drain the water)

4-5 curry leaves

2-3 green chilies diced (optional)

½ tsp black mustard seeds

10 cashews

Pinch of asafetida(optional)

1 tsp – grated ginger

Prepare Sooji (Cream Of Wheat)

Dry roast sooji on medium heat in a skillet. The sooji should be evenly roasted. Continue roasting till it is evenly light brown and releases its nutty flavor. Remove skillet from the stove and keep the roasted sooji in a bowl/plate on the side. If you leave it in the skillet it will continue to brown.

Preparing the veggies

Heat a non-stick skillet. Add oil and reduce heat. Add mustard seeds, curry leaves, green chilies, asafetida and let it splutter for 16 seconds. Add ginger, cook for another 30 seconds. Add the lentils and cashew – turn the stove on hight. Cook for a minute till everything looks light brown. When all tempering ingredients look evenly browned(not black) add onions and cook for a minute. Add all vegetables and salt(according to your taste) and reduce heat. Let the veggies cook in its own moisture, stirring occasionally. After five minutes the veggies should be all cooked – make sure they are not mushy. They should have little bit of crunch. Add roasted sooji. Give everything a stir. Add water and tomato ketchup, and turn the heat up to medium on the stove. Keep stirring while the semolina cooks and the water reduces. When the water is all evaporated, Add lemon juice and cilantro and give it a stir and turn the stove off. Serve hot.
